Vege congee

This recipe is based on the rice stew traditional to China and surrounding parts. It relies on the soup recipe previously given in the post: Garlic Fried Spaghetti.

You will need:
Water
Rice
Celery
Eggplant (Melanzanhe)
Cucumber
Pepper
Vegan MSG
Fried gluten sticks which you must get fresh on the day they are made, usually from the Asian grocer. These are large twin sticks of golden fried dough, kept at the front counter, usually lose in a cardboard box. They come in every morning and can not be kept over night.

Method:
Boil half a pot of water. Add cooked rice and simmer until the rice becomes mushy and soft and water-logged. Add Eggplant and cook. Add Cucumber and cook. Add Celery and simmer until the celery is warm but still fresh. Add pepper and Vegan MSG. Finally add plenty of soup. Enjoy with fried gluten sticks.

Meat: The Heathen addiction

Flesh eating is a Heathen and despicable act. Also the way farm animals are raised in some cultures eg. Factory Farms is deplorable.
Flesh eating can also become addiction. Flesh eating is an addiction if every sense of the word. Initially it seems as if it is pleasurable however it is gradually making you more and more ill. The taste of the flesh meals becomes morbid. This is because the condiments are well used. The taste of plain flesh, raw or cooked, is not appetising.
Luckily we have a Vegan culture dedicated to cooking appetising non-flesh food. This is the way out of the addiction. As you become a Vegan you certainly notice the health benefits, mentally as well a physiologically.
Also you enjoy the food more than you enjoyed the flesh meals.
So Veg on.

What I had for lunch

Yes folks, it has come to this. If the banality of this post does not deter you reading further then you might gain some knowledge about good food.
I had a Chicago Hot Dog from Lord of the Fries. In Melbourne we have a chain of take away food stores called Lord of the Fries. They sell Potato chips with sauces and Vegan cheeses, Vegan Hamburgers, Vegan Hot Dogs and Vegan Fried Chicken with chips.
The Chicago Hot Dog tasted just like the meat alternative. And the condiments made it juicy and tasty. There was pickled Tomato and Curcubit, Mustard and Tomato sauce and Onion. Very good. My recomendation for a good taste-bud satisfying meat substitute.

Recipe: Rice cake with savoury condiments

This is an easy recipe and very tasty. The key is getting all the ingredients.

          For the rice cake itself you will need:

Water
Rice flour
Glutinous Rice flour
Peanut oil

Put the Rice flour in a large mixing bowl. Add one quater the amount of Rice flour of the Glutinous Rice flour. Add plenty of Water, enough to make a thin slurry. Put Peanut oil in a Wok. Add the mixture and simmer on low heat with a lid covering. Depending on how much mixture you add and how thick the cake is, cook until the top has let through bubbles and is cooked.


           For the condiments you will need:

Dried or fresh Chilli

Preserved Vegetable. This is from the Chinese grocer. There are many types. One is the wet type which is in a jar. An other is the dried type in a polymer bag. They taste similar and are usually made from Chinese Cabbage or Chinese Olive leaves. The wet type can be added to the recipe as is. The dried type should be boiled with water, salt and Vegan MSG.

Preserved salted Turnip
Mung Beans
Spring Onion
Salt
Oil

With the Mung Beans you must soak them over night. Drain the soaking liquid. Add enough water to cover plus about 3cm. Cook until the beans are very soft and the liquid has gone. While still hot use a wooden spoon to mash the cooked beans. Add chopped Spring Onion, salt and oil to taste.

Vegan Fish Sauce


              To assemble the dish:

Use a spatula to take some of the rice cake out of the Wok and on to a plate. Add the Mung Bean mash, Preserved Vegetable, finely chopped Preserved Turnip, chopped Chilli and Vegan Fish Sauce.
Best enjoyed using a spoon.

Honey is good for Vegans

Honey is produced by Bees when they collect nectar from flowers. They draw the nectar up into their mouth parts and regurgitate it into the the honey comb chambers. It is a mixture of nectar and Bees' saliva. It tastes good and is good for you.

Recipe : Garlic fried spaghetti

The key to this recipe is the broth which I make before I attempt the frying. You may make the broth or soup a day before and eat it with bread. Then the next day use the soup in the fried spaghetti recipe.

Firstly the broth:
Ingredients in order of putting in:
Water
Potato
Melanzanhe
Cucumber
Tomato
Celery

Boil these until well cooked and the veges are soft.
Then add the condiments:
Nutmeg
Rosemary
Garlic powder
Onion powder
ground or fresh Chilli
Parsley flakes
Garam Masala
salt
Pepper
Vegan MSG
Sugar to balance the sweetness and saltiness

Now add plenty of Vegetable Oil to a pan and put on high heat. Roughly chop Spring Onion and add to pan. Fry until some of the Spring Onion is black. Add the Spring Onion and oil to the soup.

Just before serving the soup add two dashes of ground sage to the top.

To eat the soup with Spaghetti make the fried Spaghetti:
Boil spaghetti until softer than you would for Spaghetti Bolognaise. Set aside until cool.
For one serve crush five cloves of Garlic. Add Peanut oil to the wok. Add cooked spaghetti. Add Garlic. Fry until hot. Add Vegan MSG, Pepper and Chilli sauce. Fry until some of the spaghetti is browned. Add the broth with veges and deglaze the wok. Turn off the heat and add Spikey Herb. Serve and enjoy

I had a dream that humans and thinking creatures removed, each-other and themselves, into original nature. Where His ever roving eye watched ever Lovingly over, very exactly, days and nights. Days laying about under grassy hillocks. Evenings dining under the stars.
